Whole Grains

For thousands of years grain has played an important role in the diet of the human race, and bread is still a daily basic food.

The whole grain contains shoot, bran and starch and is a daily source of important minerals, vitamins and fibres which help to lower the cholesterol, reduce the risk of colorectal cancer and impede absorption of sugar in the blood. There are only few fibres in ordinary wheat flour and almost no vitamins and minerals, and this is one of the reasons why we should eat whole grain. With whole grain as our basic food and with organically grown grain from old species of grain we benefit both the environment and our bodies. Therefore food containing whole grain is an important element in a healthy lifestyle and for the environment.

With this book we hope to provide inspiration for including whole grain in your everyday life.
